Chicken burger with mango and chili

Ingredients for 2 servings:

  • 2 burger buns (wholemeal burger buns)
  • 2 chicken breasts
  • 1 mango(s)
  • 2 onions
  • butter
  • oil
  • 1 tbsp honey
  • 2 small chili peppers
  • 4 slices of bacon
  • 2 tbsp remoulade mixed with steak sauce
  • 2 tomatoes
  • 2 cl whiskey
  • 4 lettuce leaves
  • mint
  • coriander
  • rosemary
  • salt and pepper
  • lemon juice

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Finely dice the onions and sauté in a little butter with the honey. Deglaze with the whiskey and bring to a simmer. Turn off the heat. Dice the mango, add it, and let it simmer over the residual heat. Season with salt and pepper. Add the lemon juice. Chop a few mint leaves, coriander, and rosemary and mix in. Slice the tomatoes and chilies. Mix together some sauce. Clean the chicken breast, rub it with a little oil, season with salt, and pepper. Then grill on both sides or fry in a pan. Grill the bacon. Cut open the buns and toast them briefly. Put the burger together. Spread the sauce on the bottom half of the bun. Place lettuce and half of the mango onions on top and sprinkle with chili. Place the bacon and tomatoes on top. Slice the chicken breast diagonally and arrange it on the burger. Top with the second half of the mango onions with chili and place the top half of the bun on top. Insert a small wooden skewer to secure it.
