The highlight is the crème fraîche filling

Score the chicken breasts and season as desired. Combine crème fraîche with diced cheddar cheese and ham cubes and stuff the chicken breasts with this mixture. Then coat the breasts one by one in flour, a mixture of egg and milk, and breadcrumbs (homemade crumbs from hard rolls, pretzels, etc. work best). Tip: If desired, you can also double-bread the chicken breasts. Melt clarified butter in a pan to a depth of about 2 cm, and fry the cordon bleu on both sides until golden brown. Serve immediately.
