Chicken in peanut sauce

Ingredients for 4 servings:

  • 1 chicken, ready to cook
  • 2 onions
  • 2 cloves garlic
  • 1 bunch of soup vegetables
  • 3 tomatoes, or alternatively 1 can Pizza tomatoes
  • 1 red pepper(s), cut into strips
  • 2 tbsp peanut butter

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Cut the chicken into pieces and sear on all sides. Finely chop the onions and garlic, as well as the vegetables. Remove the chicken pieces and sear the onions, garlic, and vegetables. Dice the tomatoes and sear them briefly. Add the chicken pieces and pour in water or stock. Simmer for 15 minutes. Then stir in the peanut butter. Season with chili, curry, and pepper. Simmer for 5-10 minutes and finally add the bell pepper strips. They should stay crunchy, so don’t overcook them. Serve with rice (e.g., basmati rice) or, as in Cameroon, couscous.
