Chicken in sparkling wine

Ingredients for 4 servings:

  • 1 chicken, approx. 1.2 kg
  • Salt
  • pepper
  • 2 tbsp flour, for dusting
  • 40 g butter
  • 1 onion(s), diced
  • 4 garlic cloves, finely chopped
  • 1 bottle of dry sparkling wine
  • 250 g mushrooms, brown sliced
  • 8 morels, dried and soaked
  • 125 ml sweet cream
  • 2 tbsp flour, for the sauce

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Quarter the chicken, season with salt and pepper, and dust with a little flour. Heat the butter in a casserole dish and fry the chicken pieces until golden brown. Add the onion and garlic and fry, then cover the dish. Cook over low heat for about 35 minutes. Then deglaze with sparkling wine and simmer for another 5 minutes. Remove the chicken pieces and keep warm. Add the mushrooms and morels and cook for about 5 minutes, then reduce. Mix the flour with the cream to thicken the sauce. Season to taste. Serve with tagliatelle.
