Old Harz recipe

Harzer Knieste are new potatoes. They are thoroughly scrubbed and halved. Place them cut-side down on a greased baking sheet and brush with oil. Then they are seasoned with salt, pepper, and caraway seeds. The Knieste are baked in the oven until crispy and then served hot in their skins. Each person receives a fist-sized dumpling called “Hackus,” seasoned with salt, pepper, onions, and rosemary.
