Chicken noodle salad with curry

Ingredients for 4 servings:

  • 300 g pasta
  • 300 g chicken
  • 100g Gouda
  • 2 cans of tangerine(s)
  • 150 g yogurt
  • 125 g mascarpone
  • curry powder
  • salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Cook the pasta according to the package instructions. Cook the chicken as desired (fry, boil, etc.) and cut into cubes. Dice the Gouda cheese as well. Drain the mandarin oranges, reserving the juice. When the pasta and meat have cooled, place them in a bowl with the Gouda cheese and mandarin oranges. In a separate bowl, mix the yogurt with the mascarpone cheese. Add the mandarin orange juice to taste and season with curry, salt, and pepper. Pour the sauce over the pasta and let it sit in the refrigerator before serving.
