Ingredients for 4 servings:

  • 1 ½ kg chicken
  • 500 g salt
  • 1 bulb(s) of garlic, if desired
  • 1 onion(s), if desired

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Salt the chicken inside and out as usual. Add the remaining salt to the roasting pan so the entire base is covered. If you like, you can also halve a bulb of garlic and an onion and add them to the chicken! This adds a lovely extra aroma. Preheat the oven. I set the oven to 180°C fan/convection oven, but every oven is different and I think everyone knows their own best. Place the chicken breast-down on the salt and put it in the oven. Roast for about 45 minutes. Important: Do not add any oil or fat to the roasting pan! Tip: It’s best to buy the chicken directly from the farmer. Farm-raised chickens are fattier and juicier than those from the supermarket!
