Chicken ragout in tomato cream

Ingredients for 4 servings:

  • 400 g pasta, tagliatelle, green
  • 500 g chicken breast fillet(s)
  • 30 g clarified butter
  • 2 onions
  • 2 tbsp flour
  • 2 tbsp tomato paste
  • ¼ liter broth
  • 1 bunch of chives
  • 200 g crème fraîche
  • Salt
  • pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Add the tagliatelle to boiling salted water and cook according to the package instructions. Cut the chicken breast into thin strips, then fry them all over in hot clarified butter. Peel and dice the onions, and add them to the meat. Season with salt and pepper. Sprinkle with flour, sauté briefly, then add the tomato paste, pour in the broth, and simmer for 5 minutes. Stir in the crème fraîche. Cut the chives into curls and garnish the finished dish with them. Serve with the pasta.
