Chicken rolls wrapped in prosciutto

Ingredients for 3 servings:

  • 500 g chicken fillet(s)
  • 100 g raw ham (prosciutto crudo), thinly sliced
  • 100 g mozzarella, grated
  • 3 clove(s) garlic, squeezed
  • 3 sprigs of parsley, finely chopped
  • 1 jar pesto, red
  • 2 tbsp capers
  • some olive oil
  • some chicken broth

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Place two slices of prosciutto on the work surface. Then place one chicken fillet on top. Brush this with the crushed garlic and generously with red pesto. Sprinkle with some finely chopped parsley and a few capers. Finally, top with some grated mozzarella. Now roll the whole thing up tightly and secure with toothpicks. Fry the rolls in hot olive oil until crispy. Pour some chicken stock into an ovenproof dish, add the fried rolls, and then place in the oven at 200°C (top/bottom heat) for about 20 minutes. Serve with rice.
