Chicken roulade, croquettes and apple red cabbage

Ingredients for 4 servings:

  • 600 g chicken breast fillet(s)
  • 450 g croquettes
  • 400 g red cabbage (apple red cabbage), frozen
  • 1 onion(s)
  • 1 clove(s) garlic
  • 1 tsp, leveled paprika powder
  • salt and pepper
  • oil

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Cut the chicken breast fillets into flat cutlets. Then flatten them with a meat tenderizer. Sauté the diced onion and crushed garlic in a pan until translucent, then season with paprika. Season the chicken cutlets with salt and pepper and top with a tablespoon of onion and garlic. Roll up the chicken roulade and secure the ends with a roulade pin. Bake the croquettes on a baking tray in the oven at 200°C (top/bottom heat) for about 15-20 minutes. Simmer the apple-red cabbage in a small saucepan at low heat for about 5-7 minutes. Fry the chicken roulades in a pan with oil on all sides. Make sure the roulades are cooked thoroughly; this is important with poultry. When everything is cooked and baked, serve on plates and Bon Appétit!
