Bosnian Kljukuša – potato dish with feta

Ingredients for 4 servings:

  • 750 g potatoes
  • 400 g wheat flour
  • 3 eggs
  • 3 tbsp, leveled vegetable broth
  • 500 ml water, lukewarm
  • 200 g butter or clarified butter
  • 4 cloves garlic
  • 1 tsp, heaped vegetable stock
  • 6 tbsp olive oil
  • 1 pack of feta cheese

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

Before preparing the kljukuša, preheat the oven to 200°C (top/bottom heat) or 175°C (fan oven). Peel the potatoes, then dice them very finely or grate them coarsely and place them in a large bowl. Add the broth, eggs, flour, and about two-thirds of the lukewarm water to the potatoes. Mix all ingredients by hand until smooth. Pour the mixture onto an oiled baking sheet and spread it evenly (if you don’t want to scrub the sheet, you can also line it with baking paper). Brush the baking sheet with oil and bake the kljukuša on top. The baking time is approximately 35-40 minutes; the kljukuša should be a nice golden brown when baked. While the dish is baking in the oven, put the butter, the remaining water, the broth, and the crushed garlic cloves in a saucepan and heat until the butter has completely melted. Once the kljukuša is baked, pour the liquid over it and let it stand for another 10 minutes in the warm, but turned off, oven to allow the melted butter and garlic to fully absorb the liquid. Finally, cut the kljukuša into small, bite-sized pieces and mix again. Serve sprinkled with crumbled feta cheese. The dish also tastes delicious with fried bacon cubes, olives, salad, or something similar.
