Chicken Roulade with Rocket and Sheep Cheese

- 4 piece Chicken breast fillet
- 100 g Arugula
- 150 g Feta
- 50 g Mascarpone
- 1 branch Rosemary fresh
- 2 tablespoon Bread flour
- 1 Organic egg yolks
- Salt pepper
- Olive oil
- Wash the rocket, then blanch it in boiling salted water for 1 min., Put in a sieve, drain and finely chop. Unfortunately I didn’t have any rosemary, so I left it out here. - Put the finely crumbled feta in a bowl and mix with rocket, mascarpone, breadcrumbs, egg yolks, salt and pepper.
