Chicken Sandwich

Ingredients for 2 servings:

  • ¼ chicken, fried cold (leftover)
  • 4 slices of toast (whole grain)
  • 1 tbsp salad cream (mayonnaise)
  • 2 lettuce leaves
  • butter
  • possibly cream cheese
  • possibly salad (coleslaw)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Simple, but always good.

Remove the meat from the roast chicken from the bone and shred or dice it into small pieces. Mix it with mayonnaise in a bowl. The amount of mayonnaise depends on your taste; I use enough so that all the chicken pieces get a little, but it doesn’t ooze out later when eating. Spread the slices of toast with butter and top two with the washed lettuce leaves. Spread half of the chicken and mayo mixture on each slice of toast with lettuce, then top the other slices of toast with the other slices and cut them in half diagonally. Alternatively, you can spread some cream cheese on the bottom slice of toast or add some drained coleslaw to the chicken. This is the ideal way to use up leftover roast chicken and used to be one of my favorite sandwiches.
