a juicy schnitzel, fried on the skin
Remove the meat from the bone, leaving the skin intact. Spread the pesto on the skinless side of the resulting schnitzel. Fold the schnitzel in half like a cordon bleu and secure it with toothpicks. Season with salt, pepper, and paprika or with chicken seasoning. Heat the oil in a pan and fry the schnitzel on each side over low heat for about 8-10 minutes per side. I serve it with ratatouille.
