Chicken skewers with green curry

Ingredients for 3 servings:

  • 300 g boneless chicken thigh(s)
  • 1 stalk of lemongrass
  • 1 small piece(s) of galangal
  • 1 small piece(s) of ginger
  • 1 shallot(s)
  • 1 chili pepper(s), green
  • 1 kaffir lime leaf
  • 8 mint leaves

Instructions

Working time approx. 10 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Thai-style dinner

You’ll need 6 long skewers. Cut the chicken leg into finger-thick pieces. Chop all the remaining ingredients with a knife and then grind them in a blender or mortar until finely ground. Marinate the meat with the paste for about 20 minutes, thread it onto the skewers, and sear it on a grill or in a pan.
