Ingredients for 4 servings:
- 500 g chicken breast fillet(s)
- 4 shallots
- 1 lemon(s), organic
- Salt
- Pepper, white
- 4 tbsp oil (sunflower oil)
- ½ bunch flat-leaf parsley
- 12 slices of bacon
- possibly chili pepper(s)
Instructions
Working time approx. 20 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 20 minutes
Makes 8 skewers
Rinse the chicken breast fillet, pat dry, and cut into 24 cubes. Roughly chop the parsley. Grate the lemon zest and squeeze the lemon juice. Mix the lemon juice with the oil, lemon zest, parsley, salt, and pepper. Place the chicken and marinade in a freezer bag, seal it, and marinate for at least 4 hours. Peel and quarter the shallots. Halve the bacon slices. Wrap half a bacon slice around each piece of meat and thread them onto skewers. I always thread 3 pieces of meat and 2 pieces of shallots onto each skewer. Don’t grill the skewers for too long, or they’ll dry out. If you like it spicy, add 1 finely chopped chili pepper to the marinade. Of course, you can also pan-fry the skewers.
