Ingredients for 2 servings:
- 200 g chicken breast fillet(s)
- 200 g mushrooms
- 150 g Brussels sprouts
- ½ bunch chives
- 125 g basmati rice
- 2 tbsp sunflower oil
- salt and pepper
- 100 ml vegetable stock
- 120 ml whipped cream
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
With whipped cream
1. Cut the chicken breast fillet into wide strips. Trim and quarter the mushrooms. Trim and halve the Brussels sprouts. Finely chop the chives. 2. Cook the basmati rice in a pot of salted water according to the package instructions. Heat sunflower oil in a pan. Add the chicken breast, mushrooms, and Brussels sprouts and sauté over medium heat for 3 minutes. Season with salt and pepper. Top with vegetable stock and heavy cream and simmer over medium heat for 10 minutes. 3. Serve the chicken strips and rice. Sprinkle with chives and serve. Per serving: 35 g protein, 29 g fat, 53 g carbohydrates = 642 kcal (2690 kJ)
