Chicken strips in tomato and basil sauce

Ingredients for 6 servings:

  • 500 g chicken breast fillet(s)
  • 2 shallots
  • 6 tomatoes
  • 1 cup crème fraîche
  • 1 bunch of basil
  • salt and pepper
  • olive oil

Cut the chicken breast fillet into thin strips. Finely dice the shallots. Score the tomatoes crosswise, pour boiling water over them, and peel off the skin. Dice the tomatoes. Finely chop the basil. Sauté the shallots in the olive oil until translucent. Add the sliced ​​chicken fillet and cook without browning. Now add the tomatoes and simmer until they have collapsed. Stir in the crème fraîche and season with salt and pepper. Just before serving, stir in the basil. Serve with tagliatelle (and eat outdoors with a glass of white wine).
