Stuffed peppers – low in calories

Ingredients for 4 servings:

  • 4 bell peppers
  • 500 g minced turkey
  • 1 pack of feta cheese or sheep’s cheese, grated
  • 1 small zucchini, grated
  • 1 can of tomatoes, peeled
  • 3 tbsp tomato paste
  • 500 ml chicken broth or vegetable broth or chicken stock
  • 1 onion(s)
  • Garlic
  • some sugar
  • salt and pepper
  • 1 egg(s)
  • olive oil

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes

with minced turkey, feta and zucchini

Cut the “lid” off the peppers and remove the insides. Mix the minced meat with half a finely chopped onion, grated zucchini, the egg, grated feta cheese, garlic, pepper, and a little salt (use the amount carefully). Stuff the peppers with the mixture. Then replace the lid. Meanwhile, fry the other half of the finely chopped onion in olive oil until translucent. Then add the tomato paste and sauté. Deglaze with half a liter of broth and the can of tomatoes. Bring to a boil with garlic, pepper, salt, and a little sugar. Add the peppers to the liquid and simmer for about 30 minutes over medium heat. You can thicken the sauce if desired. It goes well with all sorts of side dishes, such as rice, baked potatoes, potato wedges, mashed potatoes, etc.
