Chicken with marinade

Ingredients for 4 servings:

  • 2 cloves garlic
  • 1 sprig(s) rosemary
  • 1 tsp paprika powder
  • 1 chili pepper(s)
  • 1 tbsp onion(s), granulated
  • 1 tsp salt and pepper, black, freshly ground
  • 1 tbsp oregano, dried
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp tomato paste
  • 1 chicken or 4 chicken legs

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Wash the chicken or chicken thighs and pat dry. Strip the rosemary needles and finely chop them along with the chili pepper and garlic cloves. Then grind them into a paste in a mortar and pestle with the remaining ingredients. Brush the mixture onto the chicken or thighs and let them soak in the mixture for at least 2 hours, preferably overnight. Then roast the chicken in the oven at 200°C (400°F) for about 45 minutes. The thighs only need about 30 minutes, depending on their thickness. Serve with a green salad and bread.
