Chickpea pancakes

Ingredients for 2 servings:

  • 100 g chickpea flour
  • 200 ml water
  • 2 tbsp coconut oil or other vegetable oil
  • 1 pinch of salt
  • possibly agave syrup or another sweetener
  • possibly berries or banana, syrup, jam as topping

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

gluten-free, vegan

Mix all ingredients into a batter. For a savory version, simply omit the agave syrup. Heat a little oil in a pan and fry the pancakes over medium heat until bubbles form. Top the pancakes with berries or other toppings. Serve warm. I made about 6 small pancakes from the batter, but since they’re very filling, 3 per person are enough.
