Chicory salad with fruit

Ingredients for 4 servings:

  • 4 stalk(s) chicory
  • 1 m.-sized apple
  • 1 small orange(s) (moro or blood)
  • 2 tsp hazelnuts or walnuts, grated
  • lemon juice
  • 1 pinch of salt
  • ½ tsp sugar
  • 100 ml yogurt
  • 1 pinch(s) of pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Clean the chicory, cut into large rings (starting at the tip), and remove the tough core parts. Wash and core the apple, finely dice it, and immediately toss with the lemon juice. Peel and rind the orange, also dice it, and mix everything together with the finely chopped herbs and grated nuts. Let it sit for a quarter of an hour, then stir in the yogurt and, if desired, sweet cream. Variation: Vinaigrette with the herbs. Make sure to add the lemon juice immediately; it should be poured over the apple to prevent it from turning brown.
