Chicory Salad with Garlic Bread

Ingredients
 

  • 1 Garlic clove crushed
  • 2 tbsp Butter
  • 4 Baguette rolls
  • 2 Pink Grapefruit
  • 4 tbsp Roasted almond flakes
  • 200 g Low fat quark
  • 300 g Chicory
  • Salt, pepper, paprika

Instructions
 

  • Mix the garlic with the butter. Salt and pepper. Brush the rolls with the garlic butter.
  • Loosen the grapefruits from the pulp, collecting the juice. Roast the almond flakes until golden brown. Let cool down a little, then mix with the quark and juice. Season to taste with salt, pepper and paprika.
  • Wash the chicory, cut out the stalk and cut into strips. Mix the chicory with the grapefruit and pour over the dressing. Eat the rolls with it.
