Children's pasta salad with cream cheese

Ingredients for 4 servings:

  • 250 g pasta (e.g. Trulli)
  • 200 g cream cheese
  • 4 tbsp ketchup
  • 2 tbsp vegetable broth
  • 1 tbsp lemon juice
  • 100 g cocktail tomatoes
  • ½ cucumber(s)
  • 100 g peas, frozen
  • 1 small can of corn
  • ½ ring/s poultry sausage
  • Parsley
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour

Cook the pasta according to the package instructions. Add the frozen peas just before the end of the cooking time. Drain the pasta and peas and let them cool. Reserve some of the cooking water. Cut the tomatoes, cucumber, and sausage into small, bite-sized pieces. Drain the corn. Mix the cream cheese with the ketchup, lemon juice, and broth thoroughly, adding a little of the cooking water if necessary. Season with parsley, salt, and pepper. Combine all ingredients in a bowl, mix gently, and let it stand. Add a little more broth later if the dressing is too thick.
