Chili Cheese Sauce

Ingredients for 1 servings:

  • 2 tbsp butter
  • 1 tbsp flour
  • 150 ml milk
  • 100 g grated cheese with high fat content
  • ¼ m.-sized Habanero pepper(s), red, hot, finely chopped
  • 1 medium-sized green chili pepper(s), e.g. jalapenos, finely chopped
  • 1 pinch of salt
  • 1 pinch(s) of pepper
  • 1 pinch of garlic powder
  • ¼ tsp all-spice

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Melt the butter in a medium saucepan and whisk in the flour, stirring gently. Remove the pan from the heat and slowly add the milk, stirring constantly to avoid lumps. Bring the roux to a boil, stirring constantly, and stir in the spices, cheese, and chilies. Reduce heat to low until the cheese is completely melted and the sauce is nice and thick. Serve warm; to keep warm longer, use a double boiler or a chafing dish.
