Chili-ginger sauce

Ingredients for 5 servings:

  • 150 g chili pepper(s)
  • 150 g onion(s)
  • 100 g ginger
  • 5 garlic cloves
  • 150 g sugar
  • 150 g gelling sugar 2:1
  • 500 ml water
  • 250 ml vinegar
  • some salt

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

Wash and trim the chili peppers. Peel the onions, ginger, and garlic. Finely chop or otherwise mince everything. Place the prepared ingredients in a saucepan along with the sugar, preserving sugar, water, vinegar, and salt. Bring the mixture to a boil and simmer for about 5 minutes. Then, while the sauce is still very hot, pour it into thoroughly rinsed twist-off jars. I use a little preserving sugar because I like the sauce to be slightly thick; of course, you can also use plain sugar. I’ve specified 5 servings because it makes 5 small jars.
