Ingredients for 4 servings:
- 250 ml oil (olive oil or neutral oil)
- ¼ cup(s) vinegar (wine vinegar or good table vinegar), red
- ½ cup(s) onion(s), finely chopped
- 1 tsp garlic, finely chopped
- ¼ cup(s) parsley, finely chopped
- 1 tsp oregano, dried
- ¼ tsp cayenne pepper
- ½ tsp salt
- 1 tsp black pepper
Instructions
Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes
Argentinian dip/sauce for fried/grilled meat/fish
Chop everything very finely. Combine the oil and vinegar, stir in the remaining ingredients, and season to taste. Let stand at room temperature for 2-3 hours before serving to allow the flavor to develop. Serve with grilled or roasted meat or fish. Dried, ground chilies can be stirred in for a spicy twist. This will keep for a few days in the refrigerator.
