Ingredients for 4 servings:

  • 400 g Chinese cabbage
  • 1 bell pepper
  • 1 small onion(s) or spring onions
  • 140 g corn from the can
  • 150 g cucumber(s)
  • 125 g feta cheese or shepherd’s cheese
  • 1 ½ tbsp vinegar
  • 1 ½ tbsp olive oil
  • 1 tsp sugar
  • ¾ tsp salt
  • some pepper
  • n. e.g. herbs, e.g. E.g. parsley

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with feta

Remove the leaves from the Chinese cabbage, wash them, trim the ends, cut them lengthwise, and then slice them. Cut the bell pepper, cucumber, and feta into small pieces and add them. Dice the onions and microwave them in an uncovered container for one minute to make them more digestible. This is unnecessary for spring onions. Then stir in. Drain the corn and add half the can. Mix together the vinegar, salt, sugar, herbs (optional), and pepper. Add the oil. Pour the dressing over the salad and mix well.
