Chinese cabbage salad with a twist

Ingredients for 4 servings:

  • 1 Chinese cabbage, cut into fine strips
  • 75 g walnuts, coarsely chopped
  • 10 g butter
  • 1 tbsp sugar
  • Salt and pepper to taste
  • 2 tsp mustard
  • 3 tbsp vinegar (raspberry vinegar)
  • 1 cup of yogurt (skimmed milk yogurt)
  • 6 tbsp oil (walnut oil)
  • Water
  • 1 tsp sugar, depending on how sweet you like it

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Lightly toast the nuts in a pan. Add the sugar and let it melt. Add the butter and mix thoroughly. Transfer the mixture to a piece of baking paper and let it cool. Mix together the yogurt, mustard, raspberry vinegar, a little water (1-2 tablespoons), salt, pepper, and sugar. Add the oil and mix everything into a sauce (works great in a shaker). Once the nuts have cooled, roughly chop them again. Fold about half of them into the Chinese cabbage. Add the sauce and mix everything thoroughly again. Place the remaining nuts on top of the salad.
