Chinese Cabbage Salad with Mustard and Egg Dressing

- 1 Head (small) Chinese cabbage fresh
- 2 Pc. Boiled eggs
- 1 Pc. Spring onions fresh
- 1 tbsp Kernels (sunflower, pumpkin, pistachio, etc.)
- 100 ml Cream
- 2 tbsp Herb vinegar
- 1 tsp Mustard medium hot
- Salt
- Sugar
- Black pepper
- Remove the hard stalk from the Chinese cabbage and cut the leaves into strips. Peel the eggs, put the yolks in a bowl and cut the egg whites into small cubes. Cut the spring onion into rings.
- Mash the egg yolks in the bowl with a fork. Then add the cream, vinegar and mustard, stir and season with salt, pepper and sugar.
- First add the spring onion rings, the stones and the egg white cubes and mix everything together. Finally fold in the Chinese cabbage strips.
