Salads / Side Dishes: Simple Chinese Cabbage Salad with Tomatoes and Lemon Yogurt Dressing

Ingredients
 

For the dressing:

  • 2 Vine tomatoes
  • 3 Shallots
  • 2 tbsp Frozen chives
  • 125 g Natural yoghurt
  • 1 few splashes Freshly squeezed lemon juice
  • 1 tbsp Vegetable oil with lemon
  • 1 tsp Maple syrup
  • Salt
  • Colorful pepper from the mill
  • 0,5 tsp Curry powder

Instructions
 

  • Remove the outer leaves from the Chinese cabbage and cut out the stalk. Cut the cabbage into bite-sized strips and rinse, then spin dry. Wash the tomatoes, remove the stalk, dice the pulp. Peel and chop the shallots.
  • Put all ingredients together with the chives in a salad bowl and mix well. For the dressing, whisk together the yogurt, lemon juice, vegetable oil and maple syrup. Match with the spices and pour over the salad. Mix everything together well.
  • Let the salad steep for about 10-15 minutes, arrange and serve. Tastes very good as a side salad with pasta, meat and fish dishes. I served the salad with a spicy noodle pan, recipe follows. Have fun trying :-).
