Chinese cabbage salad with orange and apple

Ingredients for 6 servings:

  • 1 Chinese cabbage
  • 2 apples (Elstar)
  • 3 oranges
  • 2 lemons
  • 3 tbsp sunflower oil or rapeseed oil
  • 1 tsp salt
  • 2 pinch(s) pepper, freshly ground
  • 2 tbsp sunflower seeds
  • e.g. red wine vinegar, for more acidity

very fruity, simple and vegetarian

Slice the Chinese cabbage into thin strips and dice the apples. Fillet 2 of the oranges and then cut them into small pieces. Squeeze the lemons and 1 orange. Combine the juice with the oil, pour into a glass bowl, and season with salt and pepper. If you prefer a more acidic dish, stir in a little red wine vinegar. Mix the prepared ingredients thoroughly and sprinkle the sunflower seeds over the salad. This fruity salad tastes great with casseroles, such as pasta casseroles, as it’s very refreshing.
