Ingredients for 4 servings:

  • 1 cucumber(s)
  • 1 pineapple
  • Sweet Chili Sauce
  • Lemon juice or white wine vinegar
  • Parsley, chopped
  • olive oil

Peel the cucumber, halve it lengthwise, scoop out the seeds with a spoon, and cut into thin slices. Peel the pineapple, remove the core, and cut into similarly sized slices. Combine both. Mix together sweet chili sauce, lemon juice or white wine vinegar, chopped parsley, and a little olive oil to make a dressing and toss it over the salad. Serve immediately. You can make the salad dressing according to your taste, and adjust the amount based on the number of chopped ingredients. It can be a bit thicker, as the cucumber and pineapple will release more juice and thin it out. It’s important that the pineapple and cucumber are ripe and have a good flavor of their own.
