Chinese chicken with rice

Ingredients for 4 servings:

  • 400 g chicken fillet(s)
  • 4 tbsp soy sauce
  • 1 piece(s) ginger, fresh
  • 2 garlic cloves
  • 160 g rice (brown rice)
  • 4 carrots
  • 8 spring onions
  • 6 prunes
  • 320 g soy sprouts
  • 2 tsp oil
  • some sambal oelek

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the chicken fillet into thin strips and marinate in soy sauce with grated ginger and crushed garlic clove. Cook the rice. Clean the vegetables, finely slice the carrots, and slice the spring onions. Pit the plums and slice them, draining the soybean sprouts. Heat the oil in a large pan, remove the chicken from the marinade, and stir-fry. Add all the other ingredients, the marinade, and the cooked rice, and sauté for another 2 minutes. Season with sambal oelek to taste.
