Ingredients for 1 servings:

  • 200 g sour cherries
  • 150 g butter or margarine
  • 150 g sugar
  • ½ packet of vanilla sugar (bourbon vanilla)
  • 3 eggs
  • 150 g flour
  • 1 ½ tsp baking powder
  • 1 pinch of baking soda
  • 1 pinch of salt
  • 1 tsp cinnamon
  • 125 g almonds, chopped or slivered
  • 100 g chocolate shavings (dark)

Drain the cherries and place them on a plate. Place them in the freezer for a short time. If the cherries freeze a little, they won’t become mushy as quickly when folded into the batter (this won’t happen with fresh cherries, of course). Cream the softened butter, sugar, salt, baking soda, and vanilla sugar until light and fluffy. Add the eggs and mix in. Stir in the flour, baking powder, and cinnamon. Now fold in the chopped or sliced ​​almonds and the chocolate shavings. Finally, mix in the partially frozen cherries. Fill the batter into the holes of a prepared muffin tin. Bake in a preheated oven at 200°C (convection: 180°C, gas mark 3-4) for about 20 to 25 minutes. Tip: Once cooled, you can drizzle with chocolate glaze if desired.
