Ingredients for 1 servings:

  • 110 g flour
  • 1 pinch of salt
  • 1 tsp. baking soda
  • 50 g oat flakes, wholegrain
  • 100 g chocolate drops
  • 25 g almond flakes
  • 90 g butter
  • 85 g sugar
  • ½ tsp honey
  • 1 small egg(s)
  • 1 small banana(s)
  • some vanilla

Working time approx. 25 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 37 minutes

Mix the flour, salt, and baking soda. Briefly heat the butter until softened, then beat briefly with a mixer until creamy. Stir in the sugar and honey. Mash the banana with a fork. Add the banana puree, egg (just a small one!), and vanilla (e.g., vanilla sugar), and mix until fluffy. Briefly fold in the flour mixture. Then add the oats, chocolate chips, and flaked almonds. Preheat the oven to 180°C (top/bottom heat). It’s best to use an ice cream scoop to spoon the batter onto the baking sheet; otherwise, use 1-2 tablespoons of batter (approx. 9 cookies per baking sheet). Bake in the hot oven for 10-12 minutes.
