Ingredients for 12 servings:

  • 1 egg(s)
  • 200 g flour
  • 2 tsp baking powder
  • ¼ tsp cinnamon
  • 3 tbsp cocoa powder
  • 175 g sugar
  • 100 ml oil, neutral
  • 125 g buttermilk
  • 3 banana(s), ripe

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat the oven to 180°-200°C and prepare the muffin tins. In a bowl, combine the flour with the baking powder, cinnamon, and cocoa powder. In another bowl, break the egg and whisk lightly. Then add the sugar, oil, and buttermilk and mix well. Peel the bananas, mash them with a fork, add them to the mixture, and stir briefly. Finally, add the flour mixture and gently fold in until moistened. Pour the batter into the tins and bake in the oven for 20-25 minutes. It’s best to let it cool in the tin for a few minutes.
