Chocolate – Banana – Schmarrn

Ingredients for 4 servings:

  • 2 bananas, ripe
  • 150 g flour
  • 1 tbsp cocoa powder
  • 4 eggs
  • 2 tbsp sugar
  • 250 ml milk
  • 1 pinch of salt
  • 1 tbsp oil
  • powdered sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Mash the bananas with a fork. Mix the flour and cocoa powder. Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form. Mix the egg yolks, sugar, and milk with a hand mixer. Gradually stir in the flour and cocoa powder mixture and the bananas. Gently fold the egg whites into the batter. Heat the oil in a large pan. Pour half of the batter into the pan and cook over low heat for 5 minutes until golden brown. Turn over, let it cook well, and tear it apart with 2 forks. Bake the Schmarrn until browned all over. Dust with powdered sugar to serve. Repeat with the rest of the batter. Tip: The batter will be lighter if you let it rest for 30 minutes before folding in the egg whites.
