Ingredients for 3 servings:

  • 150 ml milk
  • 125 ml sour cream
  • 100 g flour
  • 1 pkt. pudding powder, vanilla flavor
  • 4 egg yolks
  • 4 egg whites
  • 2 pts. vanilla sugar
  • 1 pinch of salt
  • Lemon(s) peel
  • Raisins, as desired
  • 4 tbsp clarified butter
  • 4 tbsp brown sugar
  • Cinnamon
  • powdered sugar

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

with sour cream – light, fine and vanilla

Beat the egg whites until stiff. Stir in the egg yolks, vanilla sugar, pudding powder, a little lemon zest, salt, flour, milk, raisins, and cream. Heat 2 tablespoons of clarified butter in a non-stick pan and pour in half the batter. Let it cook, then reduce the heat slightly. Tear the batter apart with two forks. Add 2 tablespoons of brown sugar to the pan and let it caramelize a little, turning the Kaiserschmarren frequently. Remove and keep warm. Do the same with the remaining batter. Sprinkle with cinnamon/icing sugar. This goes perfectly with vanilla sauce or any kind of compote.
