Chocolate-cherry muffins

Ingredients for 1 servings:

  • 1 cup of yogurt (150 g)
  • 1 cup sunflower oil
  • 1 cup sugar
  • 1 packet of vanilla sugar
  • 2 large eggs
  • 3 cups flour
  • 2 tsp baking powder
  • 2 tbsp cocoa powder
  • 1 handful of chocolate (chocolate drops)
  • ½ jar sour cherries, drained
  • possibly cherry juice

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Makes approximately 16 muffins. This recipe uses a yogurt cup as the measuring unit.

Preheat the oven to 180°C (fan oven). Whisk together the yogurt, oil, sugar, and vanilla sugar. Add the two eggs and whisk well. Briefly stir in the flour, baking powder, and cocoa powder. If the mixture is too thick, add a little of the cherry juice. Finally, carefully fold in the chocolate chips and sour cherries. Pour the batter into the muffin cups, filling them no more than 3/4 full. Bake at 180°C (fan oven) for 20-25 minutes, depending on your oven. The muffins will then be crispy on the outside and moist and fluffy on the inside.
