Instructions
Working time approx. 25 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 45 minutes
enough for about 50 cookies
Chop the dark chocolate and melt half (50 g) in a double boiler. Mix the flour and baking soda in a bowl and make a well in the center. Whisk the sugar, egg, and melted chocolate with a fork and pour into the well. Add the fat in small pieces and the remaining dark chocolate. Knead the ingredients in the bowl until you have a smooth dough. On a floured surface, shape the dough into two logs, approximately 25 cm long, wrap in foil, and chill for at least 2 hours. Line a baking sheet with baking paper. Cut each log into 25 slices and form the slices into balls. Roughly chop the milk chocolate. Press one side of the dough balls into the milk chocolate and place them dough-side down on the baking sheets, keeping plenty of space between each other. Flatten them with a glass or similar with a flat bottom (this will produce circles approximately 5 cm in diameter). Dip the bottom of the glass in flour every now and then. Bake the cookies in a preheated oven at 150 °C top/bottom heat for about 15 – 20 minutes.
