Dessert for adults (with alcohol and chili)
The day before, bring roughly chopped chocolate and the cream to a boil. Remove from the heat and melt while stirring. Allow to cool slightly, then season with chili flakes and cinnamon to taste. Cover and refrigerate overnight. The next day, peel and core the pears, then slice them into wedges. Bring white wine to a boil with sugar and lemon zest, then simmer the pear slices for about three minutes. Remove from the heat and let cool in the liquid. Whip the chocolate and cream mixture with a mixer like whipped cream. Using two moist tablespoons, form dumplings. Serve these on serving plates with the drained pear slices, dusting the edges with cocoa powder and garnishing with lemon balm.
