Chocolate Guinness muffins

Ingredients for 1 servings:

  • 100 g butter
  • 75 g dark chocolate (70% cocoa)
  • 200 ml beer (Guiness) or other dark beer
  • 200 g flour
  • 20 g cocoa powder
  • 1 packet of baking powder
  • 2 large eggs from free-range chickens
  • 200 g sugar, preferably muscovado
  • 45 g sour cream
  • 200 g powdered sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

for 12 muffins

Crumble the butter and chocolate and melt in a bowl over a pan of boiling water. Then let the mixture cool and stir in the beer. In a bowl, combine the flour, cocoa powder, and baking powder. In another bowl, beat the eggs and sugar for 3 minutes until fluffy. Add the chocolate mixture and eggs to the flour and mix well. Pour into a 12-hole muffin tin and bake in a gas oven at 180°C/gas mark 4 for 20-25 minutes. Meanwhile, combine the sour cream and icing sugar to make a glaze. Let the muffins cool and then glaze them.
