Chocolate Jostaberry Muffins

Ingredients for 1 servings:

  • 350 g jostaberries
  • 130 g wholemeal spelt flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 ½ tbsp cocoa powder
  • 45 g dark chocolate
  • 1 egg(s)
  • 60 g cane sugar
  • 40 g oil
  • 110 g milk
  • 8 paper baking cups

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

with wholemeal spelt flour, for 8 muffins

Chop the chocolate. Mix the flour with the baking powder, baking soda, cocoa powder, and finely chopped chocolate. Beat the egg and sugar until frothy. Gradually add the oil, milk, and flour and mix. When the batter is nice and smooth, add the jostaberries. Place 8 paper baking cups in the muffin tin and portion the batter into them. Bake in a preheated oven at 180°C (top/bottom heat) for 20-25 minutes.
