Chocolate marzipan stollen

Ingredients for 1 servings:

  • 100 g candied lemon
  • 200 g dark chocolate
  • 200 g marzipan paste
  • 250 g low-fat curd cheese
  • 500 g flour
  • 1 packet of baking powder
  • 2 tbsp cocoa powder
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 1 tbsp cognac
  • 2 eggs (size M)
  • 250 g butter
  • 150 g cherry(s), dried
  • 150 g powdered sugar
  • Flour for the work surface

Instructions

Working time approx. 1 hour 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 50 minutes; Total time approx. 4 hours 20 minutes

Grind the candied lemon peel. Chop 100g of chocolate, melt 100g of chocolate. Dice the marzipan. Knead the quark, flour, baking powder, cocoa, sugar, vanilla sugar, candied lemon peel, cognac, eggs, and 125g butter. Knead in the melted chocolate first, then the cherries and chopped chocolate, and finally the marzipan. Roll out on a lightly floured surface into a rectangle (25 x 20cm) and shape into a stollen. Place the stollen on a baking sheet lined with baking paper. Bake in a preheated oven (top/bottom heat: 175°C, fan oven: 150°C, gas mark 2) for about 50 minutes. Remove from the oven. Melt 125g butter. Brush the stollen with 1/3 of the butter. Dust with 1/3 of the powdered sugar. Repeat this process twice. Let the stollen cool.
