Chocolate mousse – very simple and very delicious

Ingredients for 8 servings:

  • 150 g dark chocolate
  • 3 eggs, very fresh
  • 2 tbsp cognac (optional)
  • 4 packets of vanilla sugar
  • 300 g cream

Instructions

Working time approx. 35 minutes; Rest time approx. 5 hours; Total time approx. 5 hours 35 minutes

First, break the chocolate into pieces. Separate 2 eggs and refrigerate the egg whites. Place the two egg yolks, the remaining egg, and the chocolate in a saucepan and, over low(!) heat, stir until the chocolate melts, then mix with the egg until creamy. Then remove from the heat and stir the cognac and 2 packets of vanilla sugar into the cream. Whisk the egg whites, then drizzle in the remaining vanilla sugar and beat until stiff. In another bowl, whip the cream until stiff. Stir the chocolate cream into the cream. Then carefully fold the egg whites into the chocolate cream. Transfer to a bowl and let it set in a cool place for about 5 hours.
