Chocolate muffins with crispy crust

Ingredients for 1 servings:

  • 250 g flour
  • 2 tbsp cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 180 g sugar
  • 100 g butter
  • 2 eggs
  • 200 ml yogurt
  • 200 g dark chocolate
  • Paper cups

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Preheat the oven to 200°C (top/bottom heat). Roughly chop the chocolate and melt it with the butter over a pan of simmering water. Then add the sugar and mix with a tablespoon. Let the melted butter cool with the chocolate. Then add the eggs, one at a time, and mix well. Then pour in the yogurt and mix again. In a large bowl, combine the flour, baking powder, cocoa powder, baking soda, and salt. Then add the chocolate mixture. Stir with a wooden spoon until a smooth batter forms (do not overcook). Line a metal muffin tin with paper baking cups. Divide the batter evenly among the cups and bake for about 18-22 minutes. Check if the muffins are done with a wooden toothpick. When no batter sticks to the muffins, they are cooked through. Let them cool on a wire rack. The muffins taste better the next day.
