Chocolate oat pancakes with applesauce

Ingredients for 4 servings:

  • 100 g oat flakes
  • 70 g low-fat curd cheese
  • 2 eggs
  • 1 pinch of cinnamon
  • 1 pinch of salt
  • 1 tsp, heaped cocoa powder
  • 2 bananas
  • possibly milk if needed
  • e.g. vegetable oil or coconut oil
  • e.g. apple puree, apple sauce or jam

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

In a mixing bowl, thoroughly mix the oats, low-fat quark, eggs, cinnamon, salt, and cocoa powder. Mash the bananas until they form a mushy mixture. Add them and stir until a thick paste forms. If desired, add a splash of milk to allow the oats to expand a little more. Heat a pan over medium heat. Melt vegetable oil or coconut oil in the pan, if desired, and fry the pancakes in batches until golden brown on each side. Serve with applesauce, apple sauce, or jam.
