Ingredients for 1 servings:
- 500 g flour
- 70 g butter
- 70 g sugar
- 1 tsp salt
- 20 g yeast
- 175 ml milk, lukewarm
- 125 g quark
- 150 g chocolate, chopped
- 5 tbsp plum jam

I never make a pre-dough because I find it works wonderfully without it. But if you want to make one, you are welcome to do so. Dissolve the yeast in lukewarm milk and add the sugar. Set aside for a moment. Mix the flour with the salt and knead in the soft, but not too liquid, butter. Add the quark and yeast milk and knead for at least 10 minutes. Let it rest for 1 hour. (I let my BBA do all of this). After it has rested, beat and knead the yeast dough again vigorously. Chop the chocolate into small pieces and knead in briefly. (Don’t worry if it runs a little, it doesn’t affect the taste.) Roll out on a floured surface into a square, but not too thin. Now spread with plum jam. Roll up the dough and cut lengthwise to make two pieces. Twist the two strands together, fold in the middle and twist together again. (How else could I describe this?) Place on a greased baking sheet and let it rise for another 30 minutes. Brush with sweetened milk and bake at 165°C fan-assisted oven (180°C top/bottom heat) for about 45 minutes. (My oven heats up very hot and needs less.) It keeps well and is very, very moist.
