Banana honey bread with yeast

Ingredients for 1 servings:

  • 1,000 g flour
  • 42 g yeast
  • 2 tbsp salt
  • 6 banana(s), ripe
  • 8 tbsp honey
  • n. B. Water for refilling

Working time approx. 1 hour; Rest time approx. 2 hours; Total time approx. 3 hours

Puree the bananas with a hand blender until liquid. Add lukewarm water to make up to about 650 ml. Dissolve the yeast either in the banana puree or in a little warm water and add to the bananas. Add half of the honey to the banana puree. Place the flour in a large bowl and mix with the salt. Now add the entire banana-yeast mixture to the flour and knead with the dough hook of a hand mixer until well blended. Cover the bowl and let it rise in a warm place until it has increased in volume significantly (or let it rise overnight in the refrigerator). Knead the dough thoroughly and divide it into 10 portions. Shape each portion into a ball and place it on a baking sheet covered with baking paper. Cover and let it rise for about half an hour. Drizzle with the remaining honey. Preheat the oven to 200°C and bake the bread for about 30 minutes. Allow to cool slightly and enjoy while still warm, spread with butter.
